What about species to species evolution: a basic answer, please...?

My mother is very, very religious. Her religion believes only in the Bible. I am not knocking it. I do believe in God. However, and I have asked this question before, when I try to talk to my Mother abut evolution. Her question to me is, "Why aren't things turning into other things now?" I am not talking about bacteria, i get it, I mean doentation over the last few decades of large species evolving into something else. i understand Darwinism and adaptation, I know things take millions of years, supposedly. But, why do we not "see" even one significant thing of size to prove to a novice. A NOVICE..simple layman's terms. Last time i got great answers, but quite frankly, I need some answers to give 60 year old people who never went to college and have only relied on the Bible for 50 years or so. Thanks,
